Meet Ashleigh:

Ashleigh grew up in Charleston, South Carolina. After high school, Ashleigh attended Newberry College for forensic science and education. Shortly after leaving Newberry, she made her way up to the mountains She attended AB Tech for Baking and Pastry Arts, graduating in 2015. Since graduation from AB Tech, she has varied her experience from local shops and restaurants to big names like Sierra Nevada. Ashleigh was also trained by European Master Chef Yiannis Stanitsas in 2018. She took a few years off to teach students with special needs and came back into the food scene with her husband, opening a food truck, Feta Flav. At Feta Flav Greek Taverna, you can find her pulling double duty between making desserts and also running the front end. When she is not working, Ashleigh loves to read, deep sea fish, play with her animals, and anything crafty. She hopes to one day own her own bakery or teaching center for adults and children to learn life skills such as culinary and baking arts.

Meet Alex:

Chef Alex Baxvanis, posing for a photo

Chef Alex Baxvanis grew up in the restaurant business. His parents started a growing chain of seafood restaurants in 1979. After helping in multiple locations and positions, he decided he wanted to stay in the foodservice business. He chose to go to Johnson and Wales for Culinary Arts, graduating in 2000. During his time at JWU, he completed his internship at Biltmore Estate. From school, he began his journey helping grow the seafood business in Alabama, Charleston and Hendersonville. He then went into the sales force for Reinhart and also Merchants Food Service. He left a successful two years to come back into the kitchen in 2018, at the S&W downtown. He had the opportunity to work with a European Master Chef, Yiannis Stanitsas, who is still a dear friend and mentor today. During the COVID shutdown, he decided to take his spices, and love of Greek food and put it to use in his food truck, Feta Flav. Now after a successful three year stint in the food truck, he decided to open a brick and mortar restaurant of his own, enter Feta Flav Greek Taverna. When not in the kitchen, Alex can be found with his wife Ashleigh, both playing with their beloved German Shepherds.
